Schedules in this last-minute commitment era are always in flux right up to (and during!) the date of the convention. This Google sheet will always have the latest schedule. Tourney games final selections are made by the convention's Tournament Director, based on seats filled in previous cons, popularity trends, and GM/Demo volunteer availability. Time slots are crafted to fit GM needs and optimize gaming time for tournament players.

In additional to tournament games, RPG's such as D&D, special gaming events, scheduled play tests with game designers, etc., you can schedule your own game, or just go to the open gaming areas to find compatible games and gamers in real time.
